Slow-cooked London broil
The first thing I learned when I signed in February, is that I do not eat meat as much as I think I do. Five pounds over a whole chicken twice a month has proved to be too much so I dropped a box monthly. However, my freezer is full of meat. It is time for a party.
I like having all this at hand, I can decide what to cook without making a trip to a supermarket. It's better when I think about it the night before, but I was called upon to do work at the last minute or so.
It's enormously helpful that I always have not only a lot of seasonal produce from the farmers market on hand but also butter, yogurt and cheeses. These days, I go to a supermarket once a month or so and then usually just to pick up a few things.
Now, let's make dinner.
If you want dessert, I recommend chilled ripe plums, currently at their peak. What could be easier?
London broil, as a thick cut of top round is often called in the United States, can be tricky to cook, as it does not have the marbling that keeps many other cuts moist and tender. Cooked too long, it can be dry and tough. I have had good luck with the technique below, but you must be watchful and adjust the time to reflect the thickness of the meat. Start testing the temperature after about 25 minutes and pull it out of the oven as soon as it hits 115 degrees. This is a great cut for leftovers, which can be used for delicious sandwiches, tacos, quesadillas and simple pasta dishes, such as strozzapreti with red onions, blue cheese and sliced London broil, easy and delicious on a summer evening.
Slow-Cooked London Broil
Makes 6 servings
1 grass-fed London broil (top round), about 1¾ to 2 pounds
4 or 5garlic cloves, crushed and pressed
— Kosher salt
— Black pepper in a mill
— Summer Vegetable Saute (recipe follows) or other seasonal side dish
— Fried Padrone Chiles (recipe follows)
1 tablespoon butter
Preheat the oven to 200 degrees.
Set the meat on a work surface. Rub the garlic all over the meat and then season it all over with salt and pepper.Located in a roasting pan, cast iron skillet or other heavy pot from the oven and cook until it reaches an internal temperature of 115 degrees, about 35 to 45 minutes.
During cooking of meat, prepare the garnishes.
When the meat reaches 120 degrees, remove from oven. Set a skillet over high heat ribbed, add the butter and when it is melted and the pan is hot, add the meat. Quickly sear on all sides to brown the meat well. Transfer to a work surface, cover with a tent of aluminum oil and let stand 5 minutes.
